Morgan,
The past couple of years of dining at The Tin Fish in Newburgh, Indiana have been absolutely a dream come true! I always enjoy good seafood and am willing to try new restaurants wherever I travel, whether it be in the U.S. on the east coast, the panhandle of Florida, New Orleans, anywhere on the west coast, around Europe, and from Mexico down to Brazil. I've had wonderful and memorable seafood dishes at a few of those locations, mostly in Italy and Brazil, but rarely in the U.S.; basically, a quality seafood entree here was only in New York, Santa Fe, and southern California, but not CONSISTENTLY! Even most restaurants in Florida have served bland seafood imported from Thailand and the prices can't be justified!
Evansville/ Newburgh seemed like an unlikely area to ever have a prospect of getting quality seafood. I had not been able to consistently have completely fresh, delicious, and perfectly prepared fish, scallops, and oysters as I can get every day right here in Southern Indiana now at YOUR restaurant! It's FANTASTIC to have such a place right here! The oysters are consistently better than anything served 'fresh' in New Orleans; the fried calamari is always perfectly cooked and tender; the lobster bisque must be a secret family recipe because I've NEVER had anything that compared; the scallops are always as fresh, and possibly better, than in Manhattan; every fish fillet I ever order is flavorful, fresh, and perfectly prepared; and, every sauce is so much better than any chain restaurant offers that they should be embarrassed for what they serve!
I'm so glad Joseph found a wonderful east coast chef familiar with the business who easily took charge, is happy and staying here, and is keeping with his original dedication of serving quality food in a fun atmosphere!
Oh, don't change ANYTHING about the onion rings! They're the best EVER too!
